  • 1 cup raw nuts (almonds, walnuts, cashews, or a mix)
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon chia seeds or flax meal (optional, for fiber)
  • 1–2 tablespoons nut butter (peanut, almond, or sunflower seed butter)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1–2 tablespoons unsweetened shredded coconut (optional, for rolling)

How to make:

Soak the dates in hot water for 5 minutes if needed, then drain. In a food processor, blend nuts until coarse, then add dates, cocoa powder, nut butter, vanilla, salt, and any extras. Blend until a sticky dough forms. Roll into balls and coat with coconut or cocoa powder if desired. Chill in the fridge for 20–30 minutes before serving.
