- 1 cup red lentils

- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- A pinch of chili flakes (optional for a little heat)
- Salt and pepper to taste
- Fresh cilantro for garnish
- 4 cups water
- 1 cup basmati rice or quinoa (optional, for serving)
Instructions
1. In a pot, sauté cumin seeds and coriander powder in a little oil until fragrant.
2. Add the diced vegetables and sauté for a few more minutes.
3. Stir in the turmeric and chili flakes, cooking for about 30 seconds to release the flavors.
4. Add the lentils and vegetable broth or water. Bring to a boil, then simmer for 20-25 minutes until lentils and vegetables are tender.
5. Season with salt and pepper, and garnish with fresh cilantro before serving. Serve this stew with steamed greens for a light, nourishing meal that supports digestion and energy flow.
